The general answer to this question is to use whatever tool you
would normally use to generate your documents and then apply the
appropriate too-to-pdf converter to produce the output (unless
the tools can do native PDF, of course).

Any output in PostScript can be easily converted; all the TeX
tools produce DVI output which can to be converted with dvipdf
and pdfTeX produces native PDF output (as well as providing
other interesting modern enhancements).  There should be no real
reason to learn anything much at all.
