Frank, the HP1200 (the 1100 isn't available new any longer) *is* a
PostScript printer: the page for it on HP's website[2] says it does
PostScript at level 2, and that is what I'mm sending it. (For reference,
it also talks PCL6 and PCL5e.)

That's great, but I think you'll find the reason they cost so
much less is (a) they're new, and (b) the 10h prints at 600dpi (see
http://www.brother.com/pub/printers/advanced_doc/control.pdf, revision C,
section 2.2 [1]) whereas the 1200 prints at, well, 1200dpi. (And does
a wonderful job, too, might I add---the print quality is amazing.)

Oh, and look, the LJ 4M also prints at 600dpi:

You get what you pay for.

`2.2 resolution
The resolution of the HL-10h printer is 600 dots per inch. When a line
spacing or graphic cannot be implemented exactly at 600 dots per inch
the printer prints the closest possible approximation to the specified
image using 600 dots per inch.'
