asyncmap 0 is what you want. Very few people want pppd to escape
anything.

I must admit I am surprised that leaving asyncmap out causes all
characters to be escaped. All the more reason to make sure it is on :)

Unfortunately you can't be so sure it _isn't_ line noise. Error
correction can only fix an error of a certain degree before ppp has to ask
for a resend. If the errors are bad enough error correction will fail
and resends will be needed.
Having said that, I don't think line noise is the main reason, but I keep
it in the back of my mind.
