The library that Linux uses to talk to iOS is libimobiledevice.
Underneath the hood, gtkpod, clementine, rhythmbox and amarok (via
lohgpod) all use this library.  So if that library won't talk to your
device none of your programs will.

On there you will also see on there this release note:

  22.03.2012: libimobiledevice-1.1.2.tar.bz2 (unstable) for developers
  has been officially released. Most prominent is iOS 5 support, ....

So, it iOS5 is supported in as of 1.1.2.  Debian is stable is currently
on 1.0.2, testing (the next version of Debian is 1.1.1).  So neither of
these will work.

The latest stable release of Ubuntu Precise Pangolin (12.04) also uses
1.1.1, so it won't work either.  The next planned release of Ubuntu,
Quantal Quetzal (12.10) currently has 1.1.4 - so it will work.  But you
would have to be game to run it.

If you are using Debian or Ubuntu, you can bring along a machine to
Humbug and I will try to compile and install 1.1.4 on it for you.  You
don't have to be too game to do that.
