In Thunderbird it's Tools/Account Settings/Composition & Addressing

If I recall correctly, in Mozilla it's hidden in plain sight on the main 
options page either Options or Account Settings. Took me a few days to 
find it too. Alternatively you can set humbug.org.au domain to only 
receive text email.

On a tangent, is anyone else using Thunderbird? I'm using 0.2 and I love 
it :-) Now if only I could get the "Next" button to work consistently ;-)
