Okay, you'll also need SMTP for this (to send email, POP3 only receives
it).  We're using QMail here, and so far, I've found that reasonably
reliable and simple to set up.

Others may recommend Postfix (we had no luck there), Sendmail (very old
but very well known) and Exim (don't know anything about this one), but
basically, it's a case of whatever works for you.

Again, likewise for POP3, I've seen an ipop3d daemon that was ran from
[x]inetd which did nicely.  We use Washington University's IMAP daemon
for IMAP access to our email, which works quite nicely as the emails are
then stored on the webserver in folders, and therefore allows us to also
get to the same emails no matter what client we're using, they all see
the same folders.

Fetchmail is great, we again use this a lot.  We've got accounts with
iTel (our ISP - davidl & stuartl @gil.com.au) so we use Fetchmail to get
those off our ISP's mailserver, I also have an account with Yahoo
Australia (sjlongland @ yahoo.com.au), fetchmail is able to run as a
daemon in the background and fetch email from all of the mentioned mail
servers with great ease.  Nice to configure using Webmin too. ;-)
