I have been very happy with Debian on my laptop (an older Dell Latitude) -
everything except sound works fine and I believe sound can be made to work
if I fork out for the driver. However, I had the benefit of the install
being done for me so I can't comment on how easy it was to get going.
(Sarah Hollings could tell you more.)
For ease-of-install I have heard great things about SuSE Linux. I know
that an install on an identical Dell Latitude went without a hitch.
SuSE also comes with an insane quantity of software on CD-ROM. However,
this seems to be true of many of the RPM based distributions.
In the long run, I suspect that Debian would appeal to you more than
other Linux distributions. The way it packages and distributes software
is closer in spirit to *BSD than other distributions, and you can have
a very minimalist setup. However, if you wanted to dip-your-toes in Linux
then SuSE (or Mandrake or RedHat) might be a better choice.
Cheers,
Raymond
