Well, it depends entirely what you want to do, and there are no real
hard and fast rules in this area. 

For example, if I run a mail server, usually all that extra oodles of
disk space that isn't really needed on that bottom of the line 80GB
drive you just bought ends up in /var, /var/log, and /var/spool. 

If it's a database server, I tend to follow the Oracle method, and
name the spools /u01, /u02 and so on.

For a inhouse user file server, /home is usually where I mount it. 

If I'm stumped, I'll just do /data01. It's quite clear that it's just
data. I could always add a /data02 as needs require.

Well, exactly. I try to make the mount points obvious. There really is
nothing wrong with mounting stuff in /, so long as it's clear
and obvious as to what its use is.

I've been meaning to have a good hard look at Mondo sometime, but I've
never gotten around to it. If I recall correctly, the latest versions
have added some networking ability to restore images. Still not as
spiffy as Ghost though.
