You might want to give the TAB a burl..
When I worked there for a few months a couple of years ago they were
aching for people who actually understood linux to come onboard. They use
a linux machine in each of their betting offices, and qnx to as the
real-time system to process bets. It's not a big place, and I didn't find
the work there particularly challenging but they offered a reasonable pay
rate to a recent uni graduate and the working atmosphere was nice and
relaxed[1] :)
They even featured in the Linux Journal a few years back.
Actually, I remember my boss of the time trying to come up with some of
the reasons they've got such a large linux rollout other than "It's
free"[2]. They were also looking at the time into hosting their own netbet
system which had previously been run by Telstra.

The main problem I've had there is that most companies (from what I have
seen) want the 'feel good' factor of Linux, ie. the perception that they
are keeping up with things and not missing any developments. But they
don't *really* want it. So they end up with a token 486 running
Linux+apache and claim that the company is Linux friendly. It may just
be that I've had a bad run of interviews.
