If you edit your /etc/inittab, you can edit what the ctrl+alt+delete
sequence does.  Look for a line something like:

ca:12345:ctrlaltdel:/sbin/shutdown -t1 -a -r now

and change it to something like:

ca:12345:ctrlaltdel:/bin/echo "no, No, NO!  This is NOT Windows!"

however, with it being at the default setting can save you from long
fsck's on occasions.
