There is a fairly comprehensive listing of "cool sites" running Unix
at the "NT4 vs Unix" page.  Specifically, the following link should
give you a fair bit of info.

This may not be exactly what you want, but another good thing to
mention would be Samba.  It's not possible to replace a NT box with
Unix+Samba and still have all the MS networking features.  Have a
look at the Samba 2.0 Press release or browse the main site.

Of local interest, the new Ipswich campus of the University of
Queensland, for which I work, employs Samba to satisfy its Windows
desktop needs.  Of course, Samba is Australian - well Tasmanian -
so anything to do with Samba is local[1].
