or, the longer answer
DHCP is the protocol behind clicking "Obtain an IP address automatically" in
Win95. It's handy for keeping one central configuration of things like DNS
servers, gateways, and IP addresses, and makes installation of new machines
much simpler.
It's not essential, just handy.
Firewalls, most people consider essential. They are definitely needed if
you're doing IP Masquerading, because you need to tell the kernel to
actually do the masqing.
