There could be something obvious I'm missing, but on my computer if I
right-click on the network manager icon in the GNOME panel and
de-select 'Enable Wireless', the computer disconnects from the
wireless network. I haven't tested this with the laptop plugged into
an ethernet network, though.

I'm not sure if this is actually turning the wireless hardware off
(i.e., if it would be good enough for use on a flight where RF devices
are forbidden).
