There are a lot of things that Outlook does better than other  
clients, but most of them only apply when you have a well maintained  
Exchange server to connect to. You'll also find that the specific  
benefits vary from person to person. I'd recommend you tell her about  
Thunderbird and suggest ways that she could try it out without  
putting her data at risk then let her decide. If she's asking for  
replacements she obviously doesn't need convincing, just options that  
she can evaluate.
