Consider using LVM and it's snapshot feature, then do a tar or rsync off that.
I personally use backuppc [1] for backups across the network, it can use tar
and rsync. For our main fileserver we have a pre- and post- backup command
that takes and removes a snapshot specifically for backups. It's really
annoying having a backup that isn't frozen in time, or has files missing or
corrupt because they changed mid-backup.
