If you want a command line interface then I like "abcde".  It's just a
set of perl scripts, but it works quite nicely, using CDDB, an encoder
of your choice, etc.  I've used it for ripping to mp3 and ogg quite easily.

I've mostly just used the default configuration, but I've discovered
that it's easy to change a lot of its behaviour if that's what you want.

Freshmeat will find it, but on Debian I just used apt-get.
