The GNU EMACS manual.   

If you really want to grok the fullness of EMACS, feed the user
manual's TeXinfo source through TeX and print it out.  For casual
reference, you can simply read it on-line with an "info" browser, or
from within EMACS itself (C-h i).

There is also a separate reference manual for the eLisp language which
is not shipped as part of the EMACS distribution.
