cat is useful to reassemble split files - even split binary files.
Recently I had to resort to backing up a Linux box to a Win2K box via
an smb share[1].  I'm copying an ext3 dump file over.  The Win2K box
doesn't support files larger than 2Gb.  I used split -b to break the dump
into smaller chunks to be copied over.

[1] Yes, this really was the only viable option.  Yes, I know it is not
elegant :)  At least the Win2K box gets backed up to DLT.
