All you should need to do is change the Device section of your XFree86
config file.  Mine looks like:

Section "Device"
        Identifier      "NVidia TNT2 m64"
        Driver          "nvidia"
        VideoRam        32768
EndSection

The driver you need to use is 'nv' if you're using stock standard
XFree86 drivers, or 'nvidia' if you're using the enhanced NVidia drivers
downloaded directly from NVidia.

There may be a GUI-ish way to do this, possibly Xconfigurator.  It's
been a LONG while since I've used it, tho.  Read the manual pages first.
