Chris,
I highly recommend Mandrake 7.0, as I have tried all others and belong
to a Linux group that meet weekly and they all use 7.0 as well. It is
very well pre configured to printers etc. and the installation is one of
the easiest. Lastly it is RedHat based so it is very easy to find
software.
