In my experience, nfs can be a bit platform specific, which is a pity.

Indeed :) I've had the most problems win vs non-win of course. i've
never met a windows based vt100 implementation that I liked. I must admit
to never having had huge problem on different unix OSes - ok occassionally

I'd agree here. I've used Linux tftp many times before and had never run
into a problem until last night. It seems there may be 2 slightly
incompatible implementations of tftp perhaps (without either being
particularly more broken than the other - perhaps they both are). This
would kinda suck.
To be honest the weird tcpdump info I posted suggested to me a more low
level problem.

Unfortunately these particular Xterms don't seem to understand the concept
of nfs booting which is kinda pity.
Looks like I have my reason to install FreeBSD on zen :)
